For Chef Claudia Bolles, cooking has never just been a career—it is the language of family, history, and pure joy.
Claudia’s culinary journey began in the vibrant heart of the Yucatan Peninsula, where her earliest and fondest memories were made amidst the rich aromas of roasting spices and simmering salsas. She grew up working alongside her parents and siblings in their bustling family-run taco and tamale stand. In that lively street-side kitchen, she learned that food was a way to connect people, bring comfort, and celebrate life. It was there, helping her family hand-press tortillas and perfect traditional family recipes, that her lifelong love for authentic Yucatecan cuisine was born.
After moving to Georgia, Claudia dedicated over a decade of her life to her community as a kitchen manager and cook for Fulton County Schools. Every day, she brought her warmth and high standards of care to feeding local children, ensuring they received nutritious, safe, and comforting meals.
Now, Chef Claudia is stepping back into her culinary roots with the launch of the Panuchos Food Truck. Ready to share the bright, bold, and wholesome flavors of her childhood with the people of Atlanta, she is on a mission to introduce the city to the true soul of Yucatan street food.
